Abstract
Quantitative determination of glucose and fructose in honey was carried out by gas chromatography. This new method was found to be much more rapid and simple than the existing colorimetry, gravimetry, or microbiological assay, and would be of advantage in the quality control of honey. Trimethylsilylation of glucose and fructose was examined by using trimethylchlorosilane, hexamethyldisilazane, N, O-bis (trimethylsilyl) acetamide, and N-trimethylsilylimidazole.Keywords
