SPECTROGRAPHS DETERMINATION OF METALS IN BREWING MATERIALS AND IN BEER HAZES

Abstract
The spectrographs determination of trace quantities of metals which may be of importance in brewing processes, for instance by modifying enzyme activity or in the formation of hazes, has been applied to brewing materials. The cathode-layer arc technique is used because of the necessity to have very sensitive and reproducible arc conditions. Spectrographic examination of representative hazes revealed the presence of heavy metals at concentrations greatly in excess of those normally found in whole beer. Thus, copper concentration in haze was 30,000–80,000 that in residual beer, for iron, tin and aluminium 4,000–50,000 and for lead, nickel, vanadium and molybdenum 1,000–4,000.Keywords
