Pasteurization Efficiency of the Vacreator when Used on Ice Cream Mix

Abstract
Using a machine with a rated capacity of 3000 lbs. per hr., the time required for fluid to pass through the Vacreator varied from 5.63 to 7.16 sec., depending upon the capacity at which the machine was operated. The operating efficiency of the machine under abnormal conditions was detd. When the temp. in the first chamber was maintained at 194[degree]F, results equal to or better than those obtained at 155[degree]F for 30 min. were obtained.
