Abstract
The dialyzable electrolytes were separated from the peelings of Jonathan apples using the Mattson electrodialysis cell. The course of the separation was followed by periodic titration of the accumulated acids and bases in the anode and cathode compartments. The anthocyanin pigment migrates as a positive ion necessitating the electrolytic titration of the basic constituents. The results vary according to the conditions of the experiment but they consistently indicate a higher ratio of basic radicals, as compared with the acidic radicals, in the peel of those apples affected by Jonathan spot.This publication has 0 references indexed in Scilit:
