Abstract
Hops (variety Eastwell Goldings) from the same growth were dried in a commercial oast, in experimental kilns without sulphur, and by freeze drying. When extracts from these three samples of hops were examined by ion exchange chromatography it was found that the freeze-dried material contained a substantial quantity of xanthohumol, a large part of which was lost during kilning. Isoxanthohumol was found in all these hops but the quantity did not increase during kilning. Evidence is presented for the presence of further compounds similar to xanthohumol.Keywords
