Abstract
The dielectric properties of honey-water mixture have been investigated using the time domain reflectometry (TDR) technique in the frequency range 10 MHz to 10 GlIz at 25°C. The dielectric spectrum of pure honey can be described by the Davidson-Cole model. Addition of water to honey leads to a broadening of the spectrum. The conductivity behavior was also investigated.Keywords
