Abstract
Staphylococcus aureus S-6 grew and produced enterotoxin B in two samples of fish protein concentrate (FPC) and three FPC-supplemented foods (beef broth, corn flour, and wheat flour). Enterotoxin B yields increased as concentrations of FPC increased in FPC suspensions as well as FPC-supplemented foods. Toxin yields obtained from FPC-supplemented beef broths (100 to 160 μg/ml). were higher than from FPC-supplemented corn flour and wheat flour (15 to 45 μg/ml). Small inocula (103 cells/ml) and large inocula ( 107 cells/ml) gave equivalent growth and toxin production after 24 hr incubation.
