Introduction

Abstract
As a recentcover of USA Weekend illustrates, the topic of hunger is in the public eye. On March 27, 1998, the story entitled The Hidden Face of Hunger in America reached 41.7 million readers (Roberts and Roberts 1998). What was startling to me, Donald Rose and Edward Frongillo Jr. and what motivated us to organize this symposium was the missing voice in this story and the many other similar news stories—that of nutritional scientists. What topic could be more central to the field of nutritional sciences than human beings not having enough food to eat?
