Method for Routine Determination of Lactose in Milk

Abstract
A polarimetric method is described which uses a single factor in correcting for volume of fat and protein precipitate. Specific rotation of lactose in the buffered phosphotungstic-acid clearing agent was 52.75 compared to 52.4 in water. Mean recovery of added lactose for 50 determinations was 100.05 [plus or minus] 0.27%. Standard deviation between 207 duplicate determinations was [plus or minus] 0.024% lactose. Addition of 0.5% HgCl2 to the milk as a preservative did not affect results.This publication has 1 reference indexed in Scilit:
