Abstract
With certain cultures of S liquefaciens which gave a greater yield of acetyl-methylcarbinol when acetaldehyde was added to the milk in which the cultures were grown than when no acetaldehyde was added, such aldehydes as propionalde-hyde, n-butyraldehyde, or n-valeraldehyde also gave an increased yield of acetylmethylcarbinol. The expected production, in considerable amounts, of homologues of diacetyl when cultures to which n-butyraldehyde or n-valeraldehyde had been added were steam-distilled in the presence of ferric chloride, did not occur. However, in 2 trials with w-valeraldehyde there was a tendency to form a small amount of a higher homologue of diacetyl. The addition of formaldehyde or furfuraldehyde to the milk cultures gave no increase in the production of acetylmethylcarbinol.
