Abstract
Some of the factors which affect the action of N-ethyl maleimide in heated mixtures of casein micelles and .beta.-lactoglobulin and in milk were examined. For comparison, other blocking agents, iodoacetic acid and ethylenedibromide were also used.This publication has 8 references indexed in Scilit:
