Etude de l’influence des protéines texturées de soja sur le bilan azoté de l’homme

Abstract
The aim of this work was to study the influence on nitrogen balance of the introduction of Textured vegetable protein (TVP) into a normal diet. Each subject’s diet was fixed according to his normal food habits. The amount of TVP consumed was 40 g dry weight, corresponding to 20 g protein. Under the experimental conditions, which approach those of the utilization of TVP in the daily diet, nitrogen balance did not differ significantly between the control week and the week with TVP, although 7 of 10 subjects had a higher nitrogen balance during the control week.
