Association of Phosphatidylcholine with Soybean Protein

Abstract
Phosphatidylcholine was associated with soybean protein in two types of interaction. One is due to hydrophobic interaction between a phosphatidylcholine molecule and hydrophobic regions of the protein. The other is due to the binding of phosphatidylcholine lamellae to the protein surface.
