Delta-Caprolactone in Heated Milk Fat

Abstract
A previously unreported component of heated milk fat, 5-caprolactone, was isolated and identified. Isolation was performed by degassing heated milk fat under high vacuum and condensing the volatiles produced. Identification was performed by comparing the gas chromatographic retention times, infra-red and mass spectra of the isolated component to 5-caprolactone which was prepared synthetically.
