Abstract
Although the metabolic processes in muscle show a greater speed under the influence of 800 atm. pressure, damage to the enzyme system, responsible for the decomposition of the carbohydrates, became evident in a decreased capacity of the compressed muscle to form esters between carbohydrates and phosphoric acid. All enzyme reactions, phosphorylations, dephosphorylations and oxidation-reductions take place in the muscle juice at a slower rate under 800 atm. pressure. The pressure causes certain changes of the enzymic properties of the muscle juice a short pressure treatment increases, and a long pressure treatment decreases the capacity for a carbohydrate-phosphoric-acid synthesis. A pressure of 800 atm. has no influence upon the blood glycolysis (measured by the sugar decrease, increase of lactic acid, and the behavior of the inorganic phosphoric acid); but 2000 atm. cause an inhibition. The reaction rate of the hydrolysis of cane sugar in a nearly protein-free enzyme soln. is the same under 800 atm. pressure as under normal conditions.This publication has 5 references indexed in Scilit:
