Abstract
An HPLC method for determining HMF (5‐hydroxymethylfurfural) in orange juice has been developed. The method for HMF involves extraction of the juice with ethyl acetate prior to reverse‐phase HPLC. Fortification studies indicate an average recovery of 96.1%± 4.1% and a detection limit of 5.0 ppb. This publication has 6 references indexed in Scilit:
