Abstract
The control of the malting process by analyses at intermediate stages has formerly been applied only to a limited degree. The ever increasing need for process control is emphasized in view of changing circumstances in the malting industry, and typical ways in which extra intermediate analyses can assist in production problems are discussed. Recommendations are made for tests prior to barley intake, prior to steeping, during the flooring period, and during kilning. The practical interpretation and the value of such tests are considered.Keywords
