Serum Enzyme and Electrolyte Levels of “Stress-Resistant” Chester White Pigs and “Stress-Susceptible” Poland China Pigs

Abstract
“Stress-resistant” Chester White pigs and “stress-susceptible” Poland China pigs which differed widely in postmortem metabolism also differed in serum calcium, sodium, inorganic phosphorus, alkaline phosphatase, lactic dehydrogenase, glutamic oxalactic transaminase and blood urea nitrogen. Although previous authors have attributed increased serum enzyme levels to leakage of enzymes from muscle membranes, no conclusive statement can be made at this time regarding the association of postmortem metabolism in skeletal muscle to the parameters of the serum which were measured in this study. Further work must also be conducted to interpret the small differences which exist in the electrolyte levels of the serum and their relationship to the “stress-susceptibility” of the animal and the nature of its skeletal muscle postmortem.
