Indices for Lamb Carcass Composition

Abstract
Carcass characteristics were studied on 165 Southdown crossbred lambs ranging in age from 119-288 days slaughtered at approximately 85 lb. Area of rib eye, fat thickness over the 12th rib, percent kidney and kidney fat and percent leg had a multiple correlation coefficient of 0.75 when correlated with percent lean in carcass. Rib-eye weight (%of loin) and fat thickness over the 12th rib were good single measurements for predicting percent carcass lean with values of 0.61 and -.57. Specific gravity measurement of the carcass and rib showed correlation coefficients of 0.47 and 0.62, for percent lean in carcass.This publication has 2 references indexed in Scilit:
