Abstract
The K of living bakers'' yeast was replaced by NH3. The process is reversible. The ammonia-yeast ferment glucose at 40% the rate of normal K-containing yeast. At first growth is slower but after several days the number exceeds that of K-yeast. Oxygen consumption of the ammonia-yeast is higher than that of the K-yeast.Keywords
