Abstract
The author was unable to isolate any metabolic products when carnosine was incubated with yeast and sugar, during 5 days, or one month with Oidium lactis. The carnosine was recovered only in small amounts; the larger part had disappeared. It seems that, as in histidine, the imidazole of the carnosin ferments to CO2, H2O and NH3, which are used for the building of the cell substance of the moulds.
