Stabilization Effect of Neutral Salts on Anthocyanins: Flavylium Salts, Anhydrobases and Genuine Anthocyanins

Abstract
Concentrated solutions of some neutral salts such as 4m MgCl2 and 4 m NaCl strongly stabilize anthocyanin anhydrobases as well as flavylium ions, and hence can effectively be used for extraction and quantitative determination of genuine anthocyanins.
