Abstract
The glycoprotein patatin comprises more than 20% of the soluble protein in mature potato tubers. To determine patatin content during development, tubers of cv. Kennebec were field-planted and analyzed during the growing season. No change in patatin content (based on dry weight) was seen in tubers weighing 2 g after 43 days compared with tubers weighing 200 g at harvest (125 days). Patatin content relative to other soluble protein constituents did not change during storage at 4 °C for 127 days. Patatin (and general protein) content was lowest when tubers sprouted after 219 days of storage. Patatin was detected in the leaves and stems of potato plants.
