Casein autoclaved with glucose during different times and baked cake were investigated for digestibility and utilization of protein. In feeding experiment (rats), digestibility of protein and its net utilization were determined. Urine was also fractionated on Sephadex G-25 gel for determination of α-amino nitrogen compounds according to their molecular weight. In vitro digestion tests (pepsin-pancreatin) were also carried out. The results of the study give evidence that the Maillard reaction products, although not completely digested, are absorbed to the body and then excreted with the urine.
