Abstract
Rennets, antimicrobial agents and milk may produce allergic and irritant reactions in cheesemakers. Penicillium molds growing on the surface of stored cheese may cause allergic alveolitis in cheese washers. This paper describes a case of [Mucor miehei] rennet-induced asthma; primary irritant [strong NaCl and milk proteins] hand eczema occurring in cheese workers is also reported.
