Abstract
SUMMARY: Studies were continued on the chemical nature of the water‐soluble substance in Muscadine grape leaves that was previously reported as inhibiting pectinase and cellulase. The inhibitor is a tannin or tannin‐like material, removable from leaf extracts by hide powder, caffeine, gelatin, and nicotine sulfate.
