Abstract
In a detailed bacteriological investigation of 4 rendering plants, salmonellae were not recovered from material after the first 2 processes of melting and expelling, but, after grinding, 25% of the samples yielded such organisms. In 3 of the plants examined it was the practice to store the product before and after grinding in heaps on the floor. Salmonellae were recovered from 50% of the samples taken from nearby ledges and from the floor at the margin of these storage heaps. This evidence, and the fact that a majority of the serotypes found in the environment were also present in the product, indicated that the latter became contaminated from the environment during the latter stages of process.[long dash]Authors. This publication has 1 reference indexed in Scilit:
