Abstract
The effect of varying the amount of enzyme, the amount of substrate, and the p H of the solution on the oxidation of pyrogallol, o-cresol, and guaiacol by peroxidase in the presence of H2O2 has been studied. The amount of oxidation product formed at any time is proportional to the amount of enzyme used, and an increase in substrate causes an increase in oxidation. Excess of H2O2 in-hibits oxidation. With varying p H, the oxidation processes behave differently and there are different optimum P h values for the reactions.
