Abstract
A corn-soy-milk blend, sweetened with cane sugar, and processed to eliminate the gelatinization characteristics of the cornmeal, was evaluated in convalescent malnourished infants and in their initial dietary management. Digestibility was excellent, nitrogen absorption high, and nitrogen retention similar to that from casein. Methionine supplementation produced questionable increases in nitrogen retention. The product was used successfully in the initial dietary management of marasmus and kwashiorkor. The excellent nutritional value of this mixture allows us to recommend its use as the major source of protein in the diet of normal or convalescent malnourished infants and children.Keywords
