Abstract
Whole casein and casein fractions were purified and their proteolysis by plasmin was examined. With whole casein a curve showing a lag period before a linear portion is obtained and with p-casein a very flat curve is given. A steep straight line was obtained with [alpha]2-casein and a sigmoid curve with [alpha]1-casein. With mixtures of [alpha]2- and [beta]-casein or [alpha]1-casein the slope of the curves decreased linearly as the proportion of [beta]- or [alpha]1 -casein increased, and a lag period was observed with some mixtures of [alpha]2- and [beta]-casein only.
