Abstract
The organization of atoms, groups of atoms and molecules in bio-materials, as well as the detailed mechanism of biological functions are formidable problems to which dielectric measurements can, in some cases, provide important clues. Solution properties of biopolymers as well as some of their synthetic models will be examined in the first part of this chapter through electrooptic as well as complex permittivity measurements.Keywords
