Abstract
Skim milk was inoculated with Micrococcus MS 102 cells to obtain initial cell levels of 20000 and 2000 per ml after heating at 82[degree]C for 5 min. and 76[degree]C for 17 sec. The development of the surviving cells was followed using standard plate counting procedures and growth curves constructed to permit the calculation of the duration of the lag phase. Unheated cells were included as controls. All the heated cells exhibited a longer lag phase of development than did the unheated controls. At the low initial cell level the lag period was 40 hr. after exposure at 82[degree]C for 5 min. as compared to 22 hr. after treatment at 76[degree]C for 17 sec. At the higher level the increased lag was not as marked.Keywords
