Unusual Flavor Defect in Cheese Similar to the Odor of Feline Urine (Felis libyca domestica)

Abstract
Cheddar cheese occasionally develops a defect characterized by an odor of cat urine (Felis libyca domestica). Gas chromatography and mass spectrometry revealed a 6-carbon mono-unsaturated ketone in vacuum distillates of fat from affected portions of cheese. This ketone was absent or present in much lower concentrations in unaffected portions of the same cheese. The odors and chromatograms of fractions of distillates indicate that the ketone does not have the catty odor.
