Abstract

Olive oil lipase estimation by Willstatter''s technique gave unsatisfactory results with enzyme preparations of low activity. The difficulty, which was insufficient emulsification, could be remedied by the addition of sodium oleate, and of increased amounts of albumin and CaCl2.
