Safety of Hydrolysates in Parenteral Nutrition

Elsewhere in this issue of the Journal, an article by Olney, Ho and Rhee questions the safety of protein hydrolysates for use as the nitrogen source in total parenteral nutrition of the human infant. This study reports the production of a Central-nervous-system lesion in the infant mouse after subcutaneous injection of protein hydrolysate solutions containing glutamate, aspartate and cysteic acid. That these "acidic" amino acids alone or in combination produce Central-nervous-system lesions in the suckling mouse is a matter of record.The neurotoxic effects of these amino acids in species other than the mouse are debatable.
