Abstract
These experiments largely confirm data obtained previously concerning the significant relation between the intensity of muscle pigmentation of the veal calf exclusively milk-fed and the hematocrit value at 8 days of age. Furthermore, pointing out a high correlation coefficient between the blood density and hematocrit demonstrated that, practically, the determination of blood density by the method of Philips and Van Slyke is a useful method to diagnose, with relatively little uncertainty, the veal calf aptitude to produce light or dark colored meat.
