Preparation of a Caseinate Model System

Abstract
A caseinate model system was prepared by redispersion of calcium caseinate. calcium phosphate complex which was isolated from skim milk by sedimentation in a supercentrifuge. The caseinate-phosphate complex was dispersed to a state comparable to its original colloidal state in milk, by rotating an initial dispersion of caseinate in whey or water in a bottle with glass beads at 4[degree]C or 60[degree]C and with air completely eliminated.This publication has 3 references indexed in Scilit:
