Abstract
A method is described in which the Technicon AutoAnalyser is used to estimate the carbohydrate content (total hydrolysable carbohydrate) of worts and beers. The carbohydrates are first hydrolysed with hydrochloric acid and the resulting reducing sugars are measured potentiometrically with a redox electrode system. This method compares favourably with manual methods and offers advantages over the automatic procedure based on colorimetry with anthrone.
