Abstract
Measured seven-day food records of 73 Japanese-American men, 35 to 55 years of age, were analyzed to develop a short dietary questionnaire for estimating individual intakes of calories, protein, fat, carbohydrate and sodium among men of Japanese ancestry. Stepwise regression analyses of individual nutrient intakes on the average daily frequencies of food items with relatively stable composition and serving size were performed to obtain regression equations. A total of 23 food groups, with six to ten in each equation, predicted the five dietary factors. The multiple correlation coefficient for calories, fat, carbohydrate and sodium ranged from 0.82 to 0.85 and was 075 for protein. A seven-day recall questionnaire was developed for recording daily frequencies of the food groups included in the regression equations. The predictive value of the questionnaire will be evaluated in a future communication.Keywords
