Abstract
A variety of plants and plant materials yielded percentages of water-soluble pectin, easily hydro-lyzed pectin and difficultly hydrolyzed pectin. Most plants contain pectin; rapidly growing plants possess high pectin contents; pericarps contain the best gelling pectin.
