Further Studies on the Alcohol Tolerance of Yeast: Its Relationship to Cell Storage Products

Abstract
Fat and carbohydrate contents of 6 yeasts (5 strains of Saccharomyces cerevisiae and Willia anomala) of different alcohol tolerances were determined. Yeasts of high tolerance store relatively smaller amts. of fat and carbohydrate than yeasts of low tolerance. The relationship between fat content and alcohol tolerance was particularly close since, with those yeasts studied, fat content varied inversely with alcohol tolerance. Aeration of yeasts during growth or acclimatizing them to high concs. of glucose both resulted in an increase in the cell fat content with a subsequent decrease in alcohol tolerance.Keywords
