Abstract
Certain brands and grades of filter paper can contribute significant errors up to 20–30 ppm nitrate nitrogen in the nitrate analysis of cured meats. Filter paper for qualitative filtration contained the largest quantity of nitrate. The brand of filter paper determined the nitrate extracted from the filter paper. Low ash or ashless quantitative filter paper contained no nitrate, except 1 box, from which a very small quantity of nitrate was extracted.
