Abstract
The amount of S evolved from milk heated for 30 min, at 75[degree]C was 54 [mu]g/1 and 110 [mu]g/1 when heated at 80[degree]C. the S-35 concentration in the volatiles from milk containing added labeled - S-35 methionine or glutathione was greater when milk was heated at 80 than at 75[degree]C, but with milk containing S-35-labeled cystine, more radioactivity was found in the volatiles when milk was heated at 75 than at 80[degree]C. This suggests that an interaction between cystine and some other group may occur to a greater extent at 80 than at 75[degree]C, thus decreasing the volatilization of S.
