Abstract
The growth of thermophile organisms in brewing sweet wort held at temperatures between 60° and 70°C results in the production of L-(+)-lactic acid. These organisms exhibit intermediate characteristics between Bacillus coagulans and Bacillus stearothermophilus.Keywords
