Abstract
3‐Hydroxy‐4‐methyl‐5‐ethyl‐2(5H)‐furanone has been isolated from a commercial sample of acid hydrolyzed soy protein by diethylether extraction of the acidified sample. Identification is supported by gas chromatography, infrared spectrophotometry, and nuclear magnetic resonance and mass spectrometry.Keywords
