Abstract
Cultures of (33) known propionibacteria (KP) representing 9 species and 16 unclassified cultures of propionibacteria (UNKP) freshly isolated from Swiss cheese were tested for their ability to grow at 2.8, 7.2, 8, and 22.2 C. Cultures were plated on sodium lactate agar over a 4-mo. period. No KP but 3 UNKP grew at 2.8 C; 16 KP and 12 UNKP grew at 7.2 C; 31 KP and all UNKP grew at 12.8 C; all cultures grew at 22.2 C. More CO2 was produced at 12.8 C than at 22.2 C over an 8-wk. incubation period. There was no relationship between species classification and ability to grow at low temperatures. This publication has 2 references indexed in Scilit:
