Conversion of Arginine to Ornithine during Malo-Lactic Fermentation in Red Swiss Wine

Abstract
During malo-lactic fermentation in red Swiss wines by a mixture of different strains of Leuconostoc oenos stoichiometric conversion of arginine to ornithine was observed. Evidence is presented that the reaction is linked to the urea cycle. Practical implications of those findings are discussed.
