The Cariogenic Property of Cereal Foods

Abstract
Albino rats were maintained on high cereal diets of raw wheat, corn, rice, oats and three processed counterparts of these 4 grains. Smooth surface caries were produced on all diets. There was no indication that the processed cereals produced increased caries, incidence or severity. The smooth surface caries developed by these cereal foods was in decreasing order: wheat, corn and rice, then oats. This was true in general of the raw as well as processed foods. The relatively extensive cariogenic property of wheat and its products is noted.Keywords
