Abstract
The end amino acids of macerated collagen were found by Sanger''s 2,4-dinitrofluoro-benzene method to be, glycine, glutamic acid, alanine and aspartic acid. Treatment with Ca(OH)2 resulted in the disappearance of dicarboxylic acid and an increase in glycine and alanine and the appearance of traces of serine. The formation of gelatin from collagen was of little influence on the end amino acid composition.Keywords
