The Keeping Quality of Dry Whole Milk Spray Dried in an Atmosphere of an Inert Gas

Abstract
An exptl. spray drier is described which permits drying in air, N2, CO2 or other gas. Comparisons were made of the keeping quality of dry whole milk dried in N2 with that made from split lots of the same milk, but dried in air and gas-packed to equivalent O2 levels. The keeping quality of the dry whole milk was found to be influenced by the amt. of oxygen left in the container and not by whether the milk was dried in air or in N.
